Open Face Cucumber Sandwiches

These open faced sandwiches can be made in any suitable quantity for the occasion. They are easy to make, filling and nutritious.

Ingredients
  

  • 2 slices whole grain bread we only use gluten free bread
  • 2 ounces hummus
  • 4 - 6 slices cucumber

Instructions
 

  • Cut a suitable number of slices of bread from your favorite loaf. Spread the hummus on the bread. Then top the hummus with slices of cucumber.

Notes

I like to toast the bread before putting on the hummus which I spread liberally. Preferably, to avoid oils and unnecessary salt, you should make your own hummus. I also like thick cucumber slices but you can adjust these to your own taste.
 
These are a very hearty meal which can be used for lunch or even just for snacks.
