
Okra Stir Fry
Ingredients
Part 1
- 1/2 cup chopped carrots
- 1/2 medium onion sliced
- 1 tsp mustard powder
- 1 tbsp coconut oil
Part 2
- 2 cups okra cut lengthwise
- 4 scallions thinly sliced
- 4 oz mushrooms chopped
- 4 oz tempeh cubed
- 1 cup blackeyed peas
Part 3
- 1/2 cup coconut milk
- 2 tsp turmeric finely chopped
- 1 tsp black pepper ground
Instructions
Part 1
- Using a large stir-fry pan with a lid, sauté the carrots, onion and mustard powder in 1 tbsp of coconut oil until browned.
Part 2
- Add the okra, scallions, mushrooms, tempeh and black eyed peas. Continue cooking for another 3 minutes.
Part 3
- Add the coconut milk, turmeric and black pepper. Cover and continue cooking for another 10 minutes.
- The stir fry is ready to serve, accompanied by a cooked grain such as buckwheat ( refer to our buckwheat recipe ) , brown rice or wild rice.
