Honey Mustard Salad Dressing

This is a vegan, soy based version of Honey Mustard Salad Dressing.
It is quick and simple to make, and tastes very similar to regular Honey Mustard Salad Dressing – athough of course it is much healthier.

Ingredients
  

Basic Ingredients

  • 10 ounces soft silken tofu
  • 3 tbsp water
  • 1 tbsp spicy brown mustard
  • 2 tsp honey
  • 1/4 tsp mustard seed, ground
  • 1/4 tsp salt
  • 1 tsp hot pepper sauce or to taste

Additional Ingredients

  • 3 tbsp olive oil
  • 2 tbsp white vinegar

Instructions
 

  • Add tofu, water, mustard, honey, mustard seed, salt and hot pepper sauce to a blender and process until smooth.

Thousand Island Salad Dressing

This is a vegan, soy based version of Thousand Island Salad Dressing.
It is quick and simple to make, and tastes very similar to regular Thousand Island Salad Dressing – although of course it is much healthier.

Basic Ingredients

  • 10 ounces soft silken tofu
  • 1/4 cup water
  • 2 tbsp white vinegar
  • 1 tbsp lemon juice
  • 2 tsp sugar
  • 6 tbsp ketchup
  • 2 tsp hot pepper sauce or to taste

Additional Ingredients

  • 2 tbsp chopped small gherkins
  • 1/4 cup chopped green peppers
  • 2 tbsp chopped green onions

Instructions
 

  • Assemble the ingredients
  • Put tofu, water, vinegar, lemon juice, sugar, ketchup and hot pepper sauce in the blender and mix until smooth.

These incredibly rich and tasty cookies are great for snacks and even deserts. They are strictly vegan.  
As always, if at all possible use organic ingredients. The rolled oats should be the large flake kind that take a fair bit of time to cook (not instant rolled oats!)

Five Bean Salad

This is a simple, quick recipe.

It is great for bringing to a Pot Luck.

Ingredients
  

  • 1 can (15 oz) black beans
  • 1 can (15 oz) pinto beans
  • 1 can (15 oz) chick peas ( garbanzo beans)
  • 1 can (15 oz) red kidney beans
  • 1 can (15 oz) white beans
  • 1 cup corn kernels
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped red bell peper
  • 1/2 cup red onion
  • 1 tsp black pepper
  • 3 tbsp extra virgin olive oil
  • 3 tbsp balsamic vinegar
  • 1/2 tbsp honey
  • 1/2 tbsp hot pepper sauce (or to taste)

Instructions
 

  • Drain all the cans of beans and empty contents into a large mixing bowl.
